Gluten Free Chocolate Chip Cookies

Who does not like chocolate chip cookies. But what about “Gluten free chocolate chip cookies”. How Good can they be? I will say excellent. I have always been a big chocolate chip cookie fan. Theres nothing better than a nice cold glass of milk with a cookie just out of the oven. It,s a tradition that I am passing down to my son, plus he does like the gluten free chocolate chip cookies. The chocolate chip cookie originated in a town called Wakefield , Massachusetts in 1937 by Ruth Grave Wakefiield who died in 1977.  She had purchased and old toll house building that was built in 1709. It was a real toll house, just like toll booths as we know today. The people that worked there would service the stagecoach horses when they would get there.  The people would grab something to eat and then be on their way paying a toll to use the trail just like we do today. The trail stretched between Boston, Ma and New Bedford, Ct. At the time New Bedford was a popular whaling town. So Ruth purchased the toll house and opened a restaurant that was called the Toll House Restaurant. One of the deserts that they served was a cookie called butter drop do. It was a cookie recipe  that already been around dating back way back when, which called for baking chocolate. Ruth expiermented with using a semi sweet chocolate and presto, the chocolate chip cookie was born. She seved the in her restuarent and the people loved them. Thats were toll house cookie came from. The word cookie comes from a Dutch word called koekje,, which means a cake that is small or little.  At that time nobody was aware of people being allergic to gluten., let alone a gluten free chocolate chip cookie or any other gluten free foods. Sadly, the restaurant closed in 1966. Then in 1984 it burnt to the ground on new years eve. But we all have thanks for Ruth perfecting then recipe.

When making gluten free chocolate chip cookies, it is the same principal as baking regular cookies, but with gluten free ingredients. There are a few tips that i discovered that seem to work pretty well for me. Some poeple will disagree but to each his own and what ever the individuality preference of that person of the perfect cookie. But using gluten free ingrediants, it does bake differently.  But the whole prosess takes about an hour and a half.  You Will need the following:

  • One teaspoon of gluten free baking powder
  • Half cup of sugar
  • Half teaspoon of salt
  • Three quarter cup of packed brown sugar
  • Two and a quarter cup of gluten free flour (rice flour can be used)
  •  One quarter teaspoon of xanthan gum (to hold cookie together).
  • Two teaspoons of gluten free vanilla
  • Two eggs
  • One teaspoon baking soda
  • Two cups of gluten free chocolate chips (chunks can be used to)
  • One teaspoon gluten free baking powder

This will make about three and one half of gluten free chocolate chip cookies. Of course it also depend on how big you make the cookies.  You can always cut the ingredients in half to make a smaller batch. I like to make my cookies a little bit bigger. You can also spread the batter across the whole sheet and make a birthday cookie cake. Decorating it just as you would a regular birthday cake, and I bet nobody would even know that the chocolate chip cookies cake was gluten free.

How To Make Gluten Free Chocolate Chip Cookies

You will need the following:

  1. One large bowl
  2. One medium bowl
  3. Blender. If you do not have a blender you can use a fork., but you must make sure  everything is blended evenly and is a little more labor intensive.
  4. Two cookie sheets
  5. And of course an oven

The first thing is to preheat oven to 400 (when you start baking cookies reduce heat to 375. this is done so when you open the door to put in cookies you loose heat, so if is preheated a little hotter, the oven won’t turn on right away cooking the cookie bottom to fast.

Take the medium mixing bowl and combine the gluten free flour, baking soda, baking powder, salt and xanthan gum. Put aside.

Take large mixing bowl add your sugar, brown sugar and butter. Blend ingredients with mixer at medium speed (scraping sides of bowl) until the mixture is at a creamy consistency. while you are still mixing, add eggs and gluten free vanilla until everything is well blended. Take the flour mixture that was put aside and add to mixture until all ingredients are thoroughly blended. Then add the gluten free chocolate chips to the cookies mix until distributed evenly throughout the cookies   mix. At this point some people refrigerate the batter for about a half hour. I think what this does is when the gluten free chocolate chip cookie dough is cool it takes a little longer for the middle to cook resulting in a cookie that is crispy on the outside and chewy on inside.  Non refrigerated it cooks more evenly throughout and you end up with a firmer cookie.

The next step is to get your cookies sheets. Here where there will be some controversy. I like to butter the pan for a crispier bottom and the flavor of the butter. There are a lot of people who disagree with this method because if you are not careful you can burn the bottom of the chocolate chip cookie. Again, to each his own. Now take your batter and with a teaspoon (I use my hands)  make a ball. The size of the of the dough ball will determine the size of the cookie. Drop the cookie ball on sheet spacing them about two inches apart. If a bigger cookie, more spacing.  I also like to flatten them down a little to bake more evenly and some  keep them in a ball.

Next turn oven down to 350 and put cookies sheets in the oven. Baking for nine to twelve minutes. Do not keep opening oven door as the oven will lose heat and will turn on burning the bottom. Take them out when they are a golden brown. Let sit for one min ant take out of sheet as they will keep cooking om the hot pan. Don’t forget that they are gluten free so the cook time might vary.

Now the only thing left to do is to enjoy your fresh baked gluten free chocolate chip cookie with a cold glass of milk. Gluten free does not mean it has to be bad tasting. There are a lot of gluten free foods  and recipes  that are quite delicious. Don’t be afraid to do some experimenting yourself. And it is a great family event to do together with delicious rewards. Million Dollar Kid

Let me get this straight first- I love my son. He is my life, BUT if i had a dollar back for every toy, gadget, trinket, that we have gotten him I would have my retirement. There is nothing better than seeing the true happiness he gets when we get him a “treat”. I wish I could only be half as happy and the feeling of joy that a child has. I think now that as I write this I realize that I am also “Treating” him for my own sense of happiness that I get when I see him so happy. Is that selfish? One of the things that does save us from total brokeness is that my wife is a, what I guess you call a “coupon queen”. And I mean that in no sarcastic way. Boy she can really dig up some good deals and on-line coupons for some of the more pricier stuff. She can even find out sales before they are even advertised. And some of the deals and coupons are only offered through the company’s web-site. One of the better places she shops online for my son is the childrens place store. The childrens place printable coupon offers some really good discounts that you can only get by printing the coupon. And there are a lot of other retailers that offer the same type of deals. So with all being done and said I kind of backed off  the nagging about her being on internet all the time because she really does save us money!

Living life on a a Gluten Free Italian Diet, sounds like the most impossible combination you could put together for me.  Who would ever think that gluten free Italian  food would be any good. Being new to this gluten free diet, I did not even know what gluten was. Everybody associates gluten as being a grain such as wheat. When in fact,  it is believed,  that there is no gluten in buck wheat, soybeans and oats. So my question was what could I really eat as a gluten free Italian Diet? So i really went in-depth to find out what gluten really was. All grains are part of the sub family of grass. And gluten is the storage protein that all grains have, and supports the growth of seeds in the plant. which is grain. So when people need a gluten free diet, it is because they are allergic to the specific type gluten to that specific type of plant. Corn,soy,rice contain their own specific type of gluten protein and also belong to a totally different family of the grass plant. It is because of this type of gluten protein that make these no good for baking.  The gluten in the wheat’s for bread  is what gives bread its texture. And I’m Italian who needs this diet and loves cafe’s.

So the question still remained as an Italian, how do I live a gluten free diet, especially a gluten free Italian diet?  Well I started to do a lot of research on gluten free Italian diets and cafe places . Believe it or not, Italy, the home of pasta is big on gluten free foods. I found out they have gluten free pizza, gluten free  croissants, and yes,  gluten free lasagna!  Everybody in Italy is tested for celiac disease when they are young, and I guess a lot of people have it. When you are at a restaurant and ask if they have a gluten free menu, the waiter will usually ask if you have celiac. If you are tested positive, their government gives you equivalent to food stamps, and also extra vacation time to go shopping and prepare their Italian gluten free food. It also must be made available  in all their schools and hospitals and places of public, by law. It is also must be labeled on all their gluten free food packaging labels.  So this gives me a lot of hope that we will follow in the footsteps to get more gluten free diet awareness in Italian restaurants and stores. Which leads to a few ideas of mine.

I would love to see a gluten free cafe open that served gluten free Italian  pastries. I really think more people would enjoy places like Starbucks if they offered more gluten free foods. A gluten free cafe can also offer Italian foods for vegans and vegetarian s to. Most cafe’s do not offer gluten free foods, but as people become more health conscious, I really think a cafe that offer gluten free products would see  a pretty good following. One out of every one hundred and thirty three people have to have a gluten free diet. Which means one grinder per hundred thirty three customers. That’s the problem. To serve gluten free foods, you can not prepare the foods in the same place as the regular foods. Thats why a gluten free cafe would do pretty good.  I know that Sub-Wayis experimenting with offering gluten free rolls in eight hundred fifty stores of their’s. They have always seem to be a pretty health conscious  company, and if your on a diet that is gluten free that is great. Thats why ” A GLUTEN FREE CAFE’  that serves gluten free Italian food for the people that need a gluten free diet would be the fore runner in a specific type of market that is not yet tapped. I thought of a few names and if anybody actually reads this

They are not the best but love to hear some ideas. Another cafe idea is a gluten free pizza cafe, and of course Italian. This type of cafe would not only serve people on a gluten free diet but also the  vegetarian and vegan people to. Of course the pizza dough would have no gluten in it. The cafe would also serve gluten free lasagna, manacotti  and all sorts of Italian food dishes. One of the benefits of a strictly gluten free italian cafe’s you do not have to worry about any gluten’s getting into the food from regular foods. Though, even if you are not on a gluten free diet, some of these foods are pretty tasty. I was pretty shocked trying some of these foods that were still very flavorful.  And as an Italian, I am pretty picky when it comes to food. And it seems that more and more cafe’s are becoming more sensitive to people who need a gluten free diet. As with any Italian diet, it’s a matter of will power. Through experimenting with all of the different type of gluten free foods, whether it being Italian diet or any other types of cafe, a healthy gluten free diet is achievable. I never thought it would be possible myself being a lover of  Italian foods,  but the diet is not so bad. There are some good diet recipes I have found on-line. I might even start posting some of recopies myself.  And as far as for my cafe idea, I think it’s a good one.
